Rotisseries Slowly Rotate Meat
on a Skewer
There are many different ways to cook
meat and a rotisserie is one choice many people make.
Rotisseries are
appliances that fit over a heat source and rotate the
meat over it. The rotisserie has a skewer that is
inserted through the meat to suspend it over the heat
source. Rotisseries then slowly rotate the meat around
on the skewer and expose all sides of it evenly to the
heat. It doesn’t sit in a pot while it cooks from the
top and loses juices from the bottom. As meat rotates
the outside seals the juices in and the meat inside
stays moist if it isn’t over cooked.
A rotisserie is a good choice if you want to barbeque a
large piece of meat. Some are even large enough to cook
a whole suckling pig for a large crowd. The rotisserie
cooking process will take some time though and can not
be rushed. You will want to cook over a low heat or the
outside of the meat will cook before the inside is done.
The rotation of rotisseries is what prevents the outside
from burning but it still will if the heat is too hot. A
low constant rotisserie heat is what you want for the
best results.
When you buy a new
barbeque you may have the option of
buying a rotisserie with it at the same time. The same
thing is true for many indoor kitchen stoves.
Rotisseries are not as commonly used indoors as they are
outdoors over a barbeque though. It is not as easy to
use a rotisserie in an oven as it is over a barbeque.
