Rotisseries are not for Vegetables!

One of my favorite new ways to cook vegetables on the bbq is not with rotisseries. My new favorite grill accessory is a perforated stainless steel vegetable pan. You can find these pans everywhere that you find bbq grill parts and grill accessories.

Some of you may already grill your vegetables in the oven all year round. Well after grilling our first set of vegetables on our barbecue recently, we've decided that this is the only way to do vegetables. No more boiling or steaming on top of the stove. No more roasting in the oven unless it is a very cold winter night. We are sold on grilling vegetables on the barbecue grill. You'll love the al dente texture as well.

Our first exposure to this way of cooking resulted from following the South Beach Diet. Yes we have lost a lot of weight in short order and are still losing. This diet is high on vegetables. Many vegetables can be cooked on your barbeque is you have the proper grill accessories - a grill pan and tongs are the most important.

Just cut your vegetables up into large, bite sized pieces and drizzle with olive oil and sprinkle with some cracked salt. Sometimes I add some other spices or marinade sauces sparingly. Try using mushrooms, onions, asparagus chunks, red and green peppers, zuccini, carrots, snow peas, leek chunks, broccoli or cauliflour. The smoky, bbq flavor is fabulous. Sometimes when I'm feeling particularly lazy, I add chunks of uncooked chicken, pork, salmon or beef and cook everything at once.
