Marinades Change Taste and Texture
A large part of cooking is learning how
to work with marinades and sauces. Steak marinade can
drastically change the taste and texture of steak and
make a poor quality cut more exciting. Marinades are
used in all types of meat and fish and may be used to
tenderize as well as add flavor. A steak soaked in a
steak marinade will result in a meal infused with
additional flare. You will find many different marinades to select from
depending on your personal tastes. Some are very strong
in flavor and other marinades are much more subtle. You
may have several you use at different times and for
different kinds of meat.
Creative cooks will make their own marinades following a
recipe or creating their own blend of flavors. A popular
combination for a steak marinade is tomato and garlic
flavors creating a barbeque sauce. A bit of sugar in it
will make it stick to the meat surface better between
basting as it melts to the outside of the meat. There
are many variations on tomato based marinades and many
people buy a commercial product and add their own
touches to it. They use the commercial sauces as a start
for their own marinade creations.
Meats can be left to soak in a marinade for as long as
twelve hours or with steak marinades they can also be
basted on the meat while it is cooking. The longer you
soak the meat in the liquid flavor the stronger the
taste will be when it is cooked. Any left on the surface
will make a glazed surface if there is sugar in the
marinade.
