Tips for Grilling and Rotisserie Recipes
After years of enjoyable barbecue
grilling and rotisserie cooking, I've made a list of
some tips that will help make your grilling more
enjoyable and your rotisserie recipes more tasty.
Following are tips that I hope you find
helpful:

Before igniting (never after) it
helps to spray a light coating of vegetable oil on
the gas grill surface to prevent foods from
sticking.

To ensure even cooking of all pieces,
try to make sure that each portion size is
approximately the same.

Piercing foods while they are cooking
will cause them to dry out. Use tongs instead to
avoid this. (I purchased a wonderful set of barbecue
tools from Ashton Green a couple of years ago. They
were a bit pricey, but are the best I've ever
barbecued with and I highly recommend them.)

To prevent the curling of fat from
around any edges of your meat, slit it at 1"
intervals along the edge.

Most sauces and marinades have a
sugar base to them. Apply these in the last few
minutes of grilling only to prevent burning and
charring.
