Mango Linguini Salad
My guests and family always ask me to
make this in the summer. It is a wonderfully refreshing
fruity salad. If
you can't find mangos or want a change, try peaches or
nectarines. They also work well.
1/2 package of linguini or a bunch 1" in
diameter
1 each red and yellow peppers, sliced thin
1 large English cucumber sliced thin
1 large mango cut up into bite-sized pieces
2 green onions chopped
Marinade Dressing:
1 tbsp. vegetable oil
1 tbsp. sesame oil
2 tbsp. soya
2 tbsp. rice wine or white vinegar
1 tbsp. brown sugar
1 tbsp. chopped fresh ginger
1/2 tsp. salt
pinch cayenne

Cook noodles and cool with cold
running water. Drain.

Toss all ingredients. Refrigerate 3-4
hours. (if making ahead, add mango at the last
minute.)
