Marinated Mushroom Salad
This salad recipe is always a hit. If you find small
button mushrooms, you can marinate the salad for several
hours. If you slice the mushrooms the vinegar is
absorbed quickly by the mushrooms and can become quite
strong, so I add it no more than one hour prior to
serving.
1 lb. sliced fresh mushrooms or small
unsliced ones
2/3 cup oil
2/3 cup red wine vinegar
1 tsp. salt
2 tsp. sugar
2 garlic cloves chopped
splash of worchestershire sauce
1/4 cup chopped fresh parsley
1/4 cup chopped green onion
1 cup cherry tomatoes whole
grated parmesan to garnish.
