Warm New Potato and Green Bean Salad
(Serve hot or cold.)
This salad recipe is a treat with new fresh red potatoes
and fresh garden beans. Alas, only in the summer! You
can also add a tin of drained tuna for a complete meal.
Serve with crusty bread or rolls.
14 small new red potatoes cooked and
cooled
2 cups of fresh green beans steamed whole
or cut into pieces (don't over cook)
3 tbsp. chopped parsley
2 tbsp. fresh dill
6 tbsp. chopped green onion
4 tbsp. chopped red onion
1 large red pepper chopped
Dressing:
2/3 cup oil
1/3 cup red wine vinegar
pepper, salt, sugar, garlic to taste.
